1. Banana Muffins!

It’s a classic! A brilliant way of using up all those bananas once they starting getting a bit brown and squidgy..

You just need 4 ripe bananas, mashed together, as well as the unusual ingredients.

  • Preheat your fan oven to 180 C
  • In a bowl, combine the dry ingredients – flour, baking powder, and sugar if you’re using it (the bananas give a good amount of sweetness anyway). You can add 1/2 teaspoon salt too for flavour if you like.
  • In a separate bowl, mash the bananas and add the milk, butter, and beaten eggs.
  • Add the wet ingredients into the dry and fold until just combined.

Spoon even amounts into your muffin tray and bake for 25 minutes (large muffins) or 15-18 minutes (mini muffins) – or until a toothpick inserted into the centre of the muffin comes out clean.

 

2. Banana muffins plus!

Other great options are to add in blueberries or apple as well as bananas. For blueberries, just add 1-2 per muffin for excellent splodging when baked. For apples, cut 2 apples into small chunks (or grate for babies) and mix in with your wet mixture instead of one of your bananas. You can throw in a teaspoon of ground cinnamon for extra ping! Raisins can also be a nice extra to throw in, you only need a few per muffin.

Another lovely variant is to add full-fat yoghurt instead of the milk.
