First things first – what you need to get started!

To make 12 muffins, or 24 mini-muffins, you need:

  • 300g floor (for extra protein, put in 100g cooked quinoa instead of 100g flour)
  • 3 teaspoons baking powder
  • 2 eggs
  • 125ml whole milk
  • 50g butter (or you can use nut butter)
  • 50g brown sugar (optional – note standard muffins for grown-ups typically have 5x that!)

 

It’s super handy to have flexible muffin trays like these ones from Lakeland or these ones from Amazon – they’re really easy to use and you can just stick them straight in the freezer if you’re restrained enough not to eat the muffins immediately!

 

All of these muffins can be stored in an airtight container for 3-4 days. Or put them in the freezer for later!
